This is one of my favourite recipes of all time. It’s easy, relatively healthy and it’s main ingredient is the best food in the world; peanut butter.
There’s no butter, sugar, golden syrup or anything particularly bad in this recipe. It’s just honey, oats, sultanas & peanut butter (although you could switch the sultanas for chocolate chips if you wanted to be a bit naughty). It also uses jumbo oats which have a lower GI.
How to make peanut butter flapjack
Peanut butter flapjack recipe
6 tbsp crunchy peanut butter
8 tbsp clear honey
100g jumbo oats
75g porridge oats
50g sultanas
1. Put the peanut butter and honey in a saucepan and heat very gently until melted, for about 4 minutes.
2. Turn off the heat (otherwise you’ll eat up with mushy porridge!) and add the oats and sultanas. Stir well until mixed.
3. Pour the mixture into a non-stick cake tin and press in with the back of a spoon – wet the spoon if it gets too sticky
4. Bake in a pre-heated oven at gas mark 5 for 15 minutes. Remove from the oven and cut into bars. Leave in the tin until completely cooled.
