There’s nothing I love more than pottering around a garden full of flowers. After spotting a beautiful lavender plant blowing in the breeze, my mind was filled with ideas of things to make. Obviously food was top of my list.
How to make lavender shortbread
Lavender shortbread recipe
Ingredients
You will need:
2 teaspoons fresh lavender
200g butter, very soft
300g plain flour
110g caster sugar
Recipe
1. Preheat the oven to gas mark 4
2. Using a pestle & mortar or a food processor, blend the lavender & sugar to get the essential oils out (you can do this days or weeks in advance to make lavender sugar, the longer you keep it, the stronger the lavender flavour will be – keep for a maximum of 6 months)
3. Sieve the sugar into the butter and put the sieved lavender to one side
4. Mix the butter and sugar, then add the flour
5. Keep combining until the mixture forms a dough (you might need to use your hands towards the end)
6. Flour the work surface and roll out the dough to approximately 5mm thick
7. Sprinkle the sieved lavender over the top of the rolled out dough and roll the rolling pin over it a few times to embed it into the mixture
8. Cut out some hearts and place them on a greased baking tray, sprinkle with caster sugar
9. Put them in the oven for 20 minutes, or until golden
10. Do something you love while you wait
11. Remove the biscuits from the oven and leave to rest on the tray for a few minutes before transferring them to a cooling rack
12. Make your favourite tea in a pretty cup, relax and enjoy!
